A LA FOLIE, a high-volume macaron production kitchen, is seeking a hands-on Production Manager to lead our team in producing thousands of high-quality macarons daily. This role is perfect for someone with experience in large-scale pastry or food production, a strong sense of urgency, and the ability to manage both people and processes in a fast-paced environment.

As Production Manager, you will be directly involved in every stage of macaron production—mastering techniques, optimizing efficiency, and ensuring top-tier quality. This is a hands-on leadership position, requiring deep expertise in high-volume production, experience with commercial pastry equipment, and the ability to keep operations running smoothly.

Responsibilities:

  • Oversee large-scale macaron production, ensuring consistency and efficiency at every stage
  • Operate and manage large pastry production equipment, ensuring proper use and maintenance
  • Train and mentor production staff, maintaining high standards of technique and quality
  • Optimize workflows to maximize output while preserving artisanal product quality
  • Maintain a fast-paced, high-output environment while meeting production targets
  • Ensure strict adherence to food safety and sanitation standards
  • Foster a motivated and collaborative team culture

Qualifications:

  • Experience in high-volume pastry or food production, ideally in macaron production
  • Strong leadership skills with the ability to train, motivate, and manage a production team
  • Hands-on experience with commercial pastry production machinery
  • Ability to maintain consistency and precision while scaling production
  • Problem-solving mindset and adaptability in a dynamic production setting
